WEEKLY SPECIAL: SARDINE 🐟🐟🐟

Sardines are commonly found in the cuisines of both northern and southern regions of Italy. In the North, in Venice, the traditional sarde in saor is made by marinating sardine steaks in white wine and vinegar, covering them in flour and frying in olive oil. In the South, in Sicily, the staple pasta con le sarde combines pasta, sardines and ingredients of a somewhat Arabic flair, such as saffron and raisins - reflecting the island's millennia-old Moorish influences. .
This week Chef Gabriele explores this rich, oily and delicious fish through various interpretations of his northern and southern regional favourites. He deconstructs the Venetian classic sarde in saor, and gives it a Thai twist with longan vinegar - all the while remaining true to traditional flavours. .
Meanwhile, while he stays close to the original in pasta chi sardi - he freshens things up in another version with a generous smothering of broccoli, in the flavour-rich large pasta dish, paccheri sarde e broccoli. .
And if you're looking for a light meal, or just to share a nibble with friends, accompanied by some fine Italian craft beers - then the insalata alle sarde or fritto misto di mare may be for you. .
