But, wait - what exactly are these exotic-sounding ingredients?
A member of the mustard greens family, cime di rapa is characterised by its slight bitter taste; it is deep green with small yellow flowers. It is a truly Italian vegetable, found in dishes all over country - but especially in home recipes of the southern Italian regions. Puglia, in particular, is famed for its orecchiette alle cime di rapa, painstakingly handmade little ear-shaped pasta (just 1kg of pasta can take 1 person up to an hour to make!), tossed with with the tasty greens, garlic and chilli, and topped with pecorino.
Also known as the Jerusalem Artichoke, or the sunchoke, topinambur is more a feature of modern Italian cooking. Neither from Jerusalem nor an artichoke (go figure), being a relation to the potato, it has nutty, earthy flavour - and an intriguing after-taste not too dissimilar to that of regular artichokes.
This week, Chef Gabriele showcases this special produce in a variety of his favourite dishes, ranging from the super-traditional with his Nonna's orecchiette alle cime di rapa - to the contemporary with his risotto topinambur e pistachio. We hope you enjoy the selection!
