Aria di Bosco: A walk through the woods with Chef Gabriele
As the summer sun fades and fall approaches, this week Chef Gabriele takes you on a contemplative walk through the woods of Tuscany, Italy.
Wild boar is our showcased ingredient this week. Featuring in countless Tuscan specialities, whether with pasta or in a stew, the tradition of cooking wild boar began in the Maremma area, where boar is widespread, and later spread into other areas of Tuscany. .
Here, Chef Gabriele presents his original creations, with a nod to the traditions of this famed region. Savour the aroma of the last of the summer's black truffles in our hearty wild boar rigatoni, or be comforted by the warm, savoury richness of wild boar enveloped in freshly-handmade pappardelle. .
Regardless of your choice, be prepared to be immersed in aria di bosco; that is, the 'air of the woods'.
